Hey-o.  I’m still alive!  Just busy.  My days kick off much earlier than they used to since starting my last summer class, and it feels like I’m going non-stop until my head hits the pillow at night.  I get up at 6am to work out, get the tots ready for the day, feed ‘em breakfast and drop them off at daycare, run back home to shower and eat breakfast, drive 45 minutes to campus, sit in class for two hours, drive 45 minutes back home, eat lunch*, study for a couple of hours, do chores (laundry, dinner prep, grocery shopping, etc.), pick the kids up, feed them dinner, bathe them, play games/read books/watch a movie with them, cook dinner for myself, put the kids to bed, eat dinner, study a little more, watch tv** and then I pass the eff out.  It’s no wonder why the weeks are flying by!

*I used to eat lunch at 1pm every single day so that I could watch The Talk.  I love the ladies of The Talk, especially Sara Gilbert (she’s vegan!  And her name is Sara!  I heart her…).  I was a dedicated viewer until I discovered Bethenny’s talk show, which happens to come on at the same time.  One episode and I was hooked.  I first became a fan of Bethenny when I started watching The Real Housewives of NYC a couple of years ago, and I give her book, Naturally Thin, a tremendous amount of credit for finally giving me the courage to give up dieting for good, listen to my body, trust myself and be good to myself.  I read it postpartum with O and it changed my life.  It really did!  Her book is full of wisdom and no-nonsense straight talk about why diets don’t work, why you should just stop the madness already and eat what you want in moderation and move the heck on with your life.  It’s about making peace with all foods, eating only what you really love and learning how to balance your choices over the course of the day, something that I still practice today (which is a big part of why I’ve been able to maintain a 40-pound weight loss for three years now!).  I highly recommend it.  Anyway, her show is no different.  She is sassy and funny and all about empowering women, and I really adore her.  So now I’m a Bethenny watcher.  I hope that Sara Gilbert will forgive me.  :/

**I started watching The Walking Dead yesterday and I am HOOKED.  I hate scary stuff (I never, EVER watch scary movies or go to haunted houses), but once I got over my initial zombie freak-out I couldn’t wait to watch another episode.  I’m just about to watch episode 3, and I must say that if you’re going to, uh… be intimate with someone during the zombie apocalypse, USE PROTECTION FOR CRYING OUT LOUD.  Only two episodes in and I totally see where this is going.

(Also?  AIM FOR THE BRAIN.)

Okay, enough flesh-eating zombie talk.  How about some plant food?  ;)

I finally snapped a few decent pics of that awesome meal from Sunday:

Daily Garnish’s Roasted Cauliflower Tahini Salad, Tamari-Roasted Chickpeas from Eat, Drink & Be Vegan and sautéed kale with garlic.

Absolutely delicious.

I used the last of the leftovers on a salad today for lunch:

I need to go so that I have enough time for an episode of The Walking Dead before bed (um, nightmares much?), but I can’t leave without raving about tonight’s dinner!  I made the Cashew-Ginger Tofu from Eat, Drink & Be Vegan, which is cubed tofu baked in a creamy sauce made of cashew butter, apple cider vinegar, soy sauce, ginger and garlic:


I could not WAIT to dig in to this!  Love how thick the sauce got.  Holy yum, man.  :)

On the side I roasted some broccolini and also made the Coconut-Lime Basmati Rice (also from ED&BV):

Instead of cooking the rice in a saucepan, I dumped everything into the rice cooker and used the brown rice setting. Worked like a charm!  The rice cooker went off at the exact same time as the timer for the tofu and broccolini and it was glorious!  This meal was pretty flippin’ spectacular…


The rice was perfectly fluffy yet creamy from the coconut milk, with tasty little hints of lime.

This tofu was ridiculous.  It took everything I had to not eat the entire pan.  I hope to make it last for two more meals- we will see how that goes.  ;)

My good friend broccolini, roasted with a little olive oil, sea salt and peppa.  Sometimes simple is best.

I can’t wait to eat this all over again tomorrow night.  :D

  1. Well I am a bit of a reality show junkie so right now I am hooked on Big Brother, Love in the Wild and Next Food Network Star. The only one that is not complete trash is NFNS but I just can’t help myself! The hubs has been out of town this week so I have not made anything yummy to eat except those peanut butter chocolate chocolate chip cookies! They are YUMMY ….but a bad idea bc again the hubs is out of town! Don’t know if you are a calorie counter or not but if you get 14 cookies out of a batch they have about 168 calories. Have a nice weekend!

    • I’m glad you enjoyed the cookies! Stick them in the freezer so they last awhile… you can pull one out and leave it on the counter to thaw for a bit or pop it in the microwave for a few seconds to warm up. This is what I do with ALL my baked good and sweets!

      There are SO MANY shows out there, my gosh. I’m a Real Housewives junkie and a fan of Dexter, Mad Men, Nurse Jackie and now The Walking Dead. I’ve been told that the competition cooking shows are awesome and that I should watch. I don’t know how they do it- I’d be a nervous wreck!
