Hi, lovelies! Man, the last two weeks have been kind of crazy. My big CHES exam is this coming Saturday, and I’ve been studying like a mad woman. I’m really nervous, but honestly I just want it to be over with at this point. If I don’t pass I can always take the exam again in April, and I’ll know what to expect. Of course I really want to rock this thing, so please send positive test-taking vibes my way! On top of all the studying, last week both boys and I were hit pretty hard with a nasty virus that wiped us out completely. We never- and I mean never- get sick, and at least one kid was home with me all week long. We went to our pediatrician’s office three times in four days. It was not a fun week, not a fun week at all. We’re all on the mend, but anyway… that’s where I’ve been. Upward and onward, yeah? (Or is it onward and upward?! You get the idea.)
This weekend is a big weekend for more than one reason- I’ll be thrilled once my test is over on Saturday (reason enough to celebrate, if you ask me!), and then the Texas State Veggie Fair is on Sunday! I hope that all you local readers will come out and support this awesome event. It’s the third year for this fair, and it’s going to be bigger and better than ever. I am seriously stoked about it, and my kids are, too. We went for the first time last year and had a total blast. This year’s fair will be held at Reverchon Park in Dallas.
The event is free (though you can make a donation to keep this thing going!) and is family- and dog-friendly. There will be a vegan cooking competition, chef demos, engaging guest speakers, live entertainment and yoga, too! Click here for the full schedule. I am especially looking forward to The Blissful Chef’s cooking demo, hearing Farm Sanctuary Co-Founder Gene Baur‘s talk, rocking out to Plowboy again, and Erin‘s yoga demonstrations. :) My kids are ready for carnival games, face painting and getting crazy in the bounce house!
One last thing: come hungry. ;) I’m starving myself from now until Sunday to make room for multiple foodgasms.
Speaking of food, here are a few things that I’ve been munching on in the last couple of weeks:
A veganized version of Rachael Ray’s Drunken Risotto- a fall tradition! I shall post the veganized recipe soon!
A modified version of Emily’s pasta with creamy sweet potato sauce.
I used brown rice shells and added kale to the mix- glorious!
My all-time favorite nut butter, without a doubt.
